Encosta da Capela Sparkling Alvarinho Reserve Extra Brut 2020

The Encosta da Capela grapes are grown on their own farm. Coming from old vines, in simple cordon, well ventilated and with good sun exposure. Planted in small terraced plots on west facing slopes. The terrain is sandy with the presence of granite underground. The altitude varies between 150 and 300 meters in S. Paio – Melgaço.

The variety is 100% Alvarinho, with manual harvest. Pressing is light and the entire grape is subjected to the flotation process to extract the lees. Fermentation starts with selected yeast and at controlled temperatures. Later, it is thinned and the batch where it ages in stainless steel until bottling. In bottle it ages for at least 4 months before going out on the market.
